Kale Greek salad

This beaut is a new take on our classic Family Salad. Kudos to the Hubs for thinking to add kale for some extra iron and crunch. 🥗

Ingredients (serves 2)

  • 2 large handfuls organic, pre-washed mixed greens
  • 1 large handful organic kale, chopped
  • 1 organic vine-ripened tomato, sliced
  • 1 handful of sliced almonds (cashews are also good!)
  • 2 tbsp Feta cheese
  • 3 tbsp olive oil
  • 2 tbsp Balsamic vinegar
  • Optional: 2 tbsp (roughly 1/4) red onion, chopped finely
  • Freshly ground black pepper and sea salt, to taste (we use lots!)



  1. Put veggies in a medium bowl, starting with the greens on the bottom.
  2. Add oil and vinegar.
  3. Toss.
  4. Top with S&P and any other dried Mediterranean herbs (e.g. oregano) you wish.
  5. Toss again and serve immediately.
