This beaut is a new take on our classic Family Salad. Kudos to the Hubs for thinking to add kale for some extra iron and crunch. 🥗
Ingredients (serves 2)
- 2 large handfuls organic, pre-washed mixed greens
- 1 large handful organic kale, chopped
- 1 organic vine-ripened tomato, sliced
- 1 handful of sliced almonds (cashews are also good!)
- 2 tbsp Feta cheese
- 3 tbsp olive oil
- 2 tbsp Balsamic vinegar
- Optional: 2 tbsp (roughly 1/4) red onion, chopped finely
- Freshly ground black pepper and sea salt, to taste (we use lots!)
Directions
- Put veggies in a medium bowl, starting with the greens on the bottom.
- Add oil and vinegar.
- Toss.
- Top with S&P and any other dried Mediterranean herbs (e.g. oregano) you wish.
- Toss again and serve immediately.
